2 Grease a 9" x 13" baking sheet by drizzling about 2 tablespoons of the olive oil. The olive oil gives the bottom crust great flavor and a good crunch.
0 Infuse olive oil with garlic by placing the oil in a small pan over low heat. Add minced garlic cloves and simmer a few minutes until aromatic. Set aside.
1 In a large mixing bowl, combine the warm water, yeast, and sugar. Let sit for 5 minutes.
4 Add flour and salt to the yeast mixture then beat until a dough begins to form.
3 Combine 3 tablespoons of the olive oil with the rest of the dough ingredients, and beat with an electric mixer for about 60 seconds.
5 Place the sticky batter into the prepared pan, cover the pan, and let it rise at room temperature for 1 hour.
6 Gently poke the dough all over with your index fingers.
7 Drizzle it lightly with the rest of the olive oil, and sprinkle the dried herbs of your choice. Place the bread in a cold oven and heat to 375°. The bread will continue to rise for a second time while the oven is preheating. Bake until golden brown, about 15-20 minutes.
